Red Potato Green Bean Salad

3 lbs medium size Red Potatoes

1 lb Green Beans (Ends removed)

1/2 cup of Olive Oil

A Dozen Garlic Cloves (Diced small)

1/4 cup of Chopped Fresh Parsley

4 tbsps Dijon Mustard

1/8 cup of Red Wine Vinegar

Salt and Pepper


Cook potatoes in boiling salted water for 15 minutes

Turn off heat

With a thin knife pierce several potatoes till knife slides easily threw potato

Let potatoes sit in hot water till potatoes are knife tender

Drain, cool and place in a large bowl

In a separate pot of boiling water add beans and bring to boil cook for 1 minute

Drain and then cool

Add potatoes

Mix oil, garlic, mustard, parsley, with wire whisk add vinegar and blend well

Pour dressing over the potatoes and beans

Mix well

Season with salt and pepper

Serve at room temperature or iced cold
