Baked Crab Stuffed Shrimp in Casserole

2 lbs bag of peeled and deveined thawed Shrimp
1/2 lb of Crab meat, out of shell (any style)
2 Sticks of Butter (Melted)
2 Celery Stalks ( Small dice)
1 Smallto Medium Onion (Small dice)
1/8 Cup of Chopped Parsley
1 – 6 x 8 oz Jar Clam Juice
2 to 3 Cups of Plain Panko Breadcrumbs
1/4 Cup of Oil
4 Garlic cloves (Small diced)
1 tsp of Salt and Pepper plus 1 tsp of Salt and Pepper
Place shrimp in 9 x 12 casserole
Season with the first tsp of salt and pepper
Pour 1/2 of the butter on the shrimp spread evenly and set aside
In a large saute pan add 1/2 of the remaining butter and oil in the preheated pan
Add garlic and saute 1 minute, Add celery plus onions and cook for 2 – 3 minutes till tender
Add crab meat, parsley, and clam juice
Bring to boil and cook for 3 minutes
take off heat and add 2 cups of panko
wait 5 minutes for panko to absorb the liquid
Add the remaining panko if you desire a dryer stuffing
Season with remaining salt and pepper
Let cool for 10 minutes
Top the shrimp with the stuffing and spread evenly
Top with the remaining butter
Bake in a preheated 400 degree oven for 15 – 20 minutes
Cook till shrimp are cooked and stuffing slightly brown
Serve with lemon
