Classic Creole Sauce

- Toss with your choice of Chicken, Shrimp, Pork, etc.
1 Bunch Scallions (Sliced thin)
2 x Red and Green peppers (Medium diced)
2 x White onion (Medium diced)
1/4 Cup of Garlic (Fine diced)
2 tbsp Cajun Spice (Add to your liking)
2 tsp of Hot sauce (Add to your liking)
2 x 24 – 26 oz cans of crushed Tomatoes
2 tbsp Worcestershire Sauce
1/4 Cup of Oil
2 Bay Leaves
In a large sauce pot add the oil to the preheated pot
Add peppers, onions, garlic, and saute for 5 minutes till soft
Add the cajun spice, hot sauce, and bay leaves saute for 2 minutes
Add the worcestershire sauce and tomatoes
Reduce heat to simmer and cook for a 1/2 hour
Adjust seasonings, toos in scallions
- Sauce can be refrigerated for up to a week
