Sole Oreganata over Broccoli Rabe

2 Bunches Rabe (Stems removed)

6 Garlic cloves (Sliced thin)

1/4 cup of Olive Oil Plus 2 tbsps

1/4 cup of Water

4 Filets of Flounder

1 Large can good Whole Plum Tomates

1 tbsp Dried Oregano

1/2 cup of Italian Bread Crumbs

Salt and Pepper


Heat large saute pan on high

Add oil and garlic and saute but do not brown

Add the rabes 1/4 at a time wilt, then add the next 1/4

Saute till all rabes are added

Add water and bring to a boil

Cover and saute till rabes are tender

Reduce till water cooks off

Add to a 9 x 12 baking dish

Top rabes with the flounder, season with salt and pepper

Crush tomatoes by hand over flounder

sprinkle with oregano and the topped with breadcrumbs

drizzle remaining olive oil

Bake at 400 degrees for 10 – 15 minutes till fish flakes and lightly brown
