Summer Vegetables Ratatouille

1 x Zucchini (Medium diced)
1 x Yellow Squash (Medium diced)
1 x Eggplant (Peeled and Medium diced)
1 x Large Onion (Medium diced)
1 x Green Pepper (Medium diced)
1/2 Dozen Garlic Cloves (Small diced)
1 tsp Dried Thyme Leaves
1 x 24 – 26 oz Can diced Tomatoes with Juice
In a large pot add the oil and garlic
Turn on to medium heat and slowly cook garlic till lightly brown
Add the onion and peppers
turn the heat to high
Cook for 5 minutes
Add thyme and cook for one minute
Add both squashes and eggplant
Cook for 5 minutes till tender
Add canned tomatoes and bring to a boil
Then cover and reduce heat to a simmer
Cook slow for 45 minutes
Add salt and pepper
Serve hot or at room tempature
