Pesto New Potato Salad

5 lbs Red New Potatoes (Cooked and cut 3/4″ cubes)

1 Large bunch Fresh Basil Leaves (Approx 4 cups)

6 Cloves Garlic

1 cup of Olive Oil

1/2 cup of Parmesan Cheese

1/4 Pine Nuts (Optional)

3 cups of Mayo

Salt and Pepper


  • In a blender or food processor

Add the basil, garlic, olive oil, cheese and pine nuts

Blend till smooth

season with salt and pepper

In a large bowl mix the potatoes, pesto sauce, and mayo

Adjust seasonings

For a wetter potato salad add more mayo or pesto sauce

Serve chilled
