Pasta Scallops Casino

1 lb Medium Bay Scallops

1/2 Bacon (Cut into pieces)

1 Small red and green pepper (Diced small)

2 Scallions (Small slices)

6 Garlic cloves (Diced small)

1/2 cup Fresh Chopped Parsley

1/2 cup of olive oil

1/2 of a stick of butter

Juice of 1 fresh lemon

1/4 tsp Crushed red pepper (Optional)

1 cup of Vegetable stock

1 lb Penne Pasta

1 cup of Parmesan Cheese


Cook pasta according to package and rinse and set aside

In large saucepan heated over med high heat

Add 1/2 cup of oil

Add bacon and cook till crispy

Remove bacon with slotted spoon to retain oil

add the other 1/2 of oil and garlic

Saute 1 minute

Add the peppers, scallions, and scallops saute for 2 minutes

Add butter, parsley, lemon juice, and veg stock

Boil

Toss in the pasta and bacon

Cook for 2 to 3 minutes

Add Cheese

Enjoy!
