Sun Dried Tomato Crusted Shrimp

26 to 30 Peeled and deveined shrimp (Thawed)

1x 6 to 8 oz Jar of sun dried tomatoes in oil

6 Garlic cloves (Rough chopped)

1 tsp Dried Thyme

1 tbsp Dijon Mustard

2 cups of Panko Breadcrumbs

Juice of Lemon

1/8 cup Oil mixed with 1/2 stick of melted butter

1 tsp of Salt and Pepper


Pre heat oven to 400 degrees

Place shrimp in a 9 x 12 baking pan

Toss with oil and salt and pepper

Place in refrigerator

Drain the sun dried tomatoes and fine dice them *save the oil

In a large bowl add all the remaining ingredients and mix well by hand

Add the reserved oil and mix well

Place the tomato crust on top of the shrimp

Lightly press and do not pack down

Bake at 400 degrees for 15 – 20 minutes till bubly brown
