NY Strip Steak Au Poivre

2 x 1 ounce Boneless N.Y Strips

4 tbsp Coure Ground Pepper

2 Shallots (Small diced)

4 Garlic cloves (Small diced)

4 tbsp of Butter and 4 tbsp oil

1/8 Cup of Brandy

1/4 Cup of Heavy Cream

Salt and Pepper


Season steak with salt (liberally)

Press black pepper on to the steak and reserve 1 tbsp of pepper for sauce

In a preheated saute pan add 1/2 the butter and all the oil

Add steaks and sear both sides (4 min each side)

Remove and let rest

In same pan add the remaining butter, pepper, garlic and shallots (cook 1 minute)

Add brandy (let it flame) then add heavy cream and reduce till thickens

Pour sauce over the steak

Enjoy!
