Garlic Parmesan Mashed Potato Casserole

5 lbs peeled potatoes (Diced large)
1/2 cup of Olive Oil
1 cup of Heavy Cream
1 Stick of Butter
a Dozen Garlic Cloves (Chopped)
1/4 cup of Chopped Parsley
1 cup of Parmesan Cheese plus 1/4 cup
2 x 2 tsp each Salt and Pepper
Add the 2 tbsp of salt and pepper in a large pot of water and add potatoes
Bring water to a boil and cook till tender
In the meantime
Add the 1/2 cup of olive oil and garlic to a medium sauce pan
Cook over medium heat till the garlic is cooked
Slowly add the heavy cream and stick of butter
Then bring to a boil
Add the parmesan cheese and cook for 2 minutes
Strain the potatoes and add the garlic and cream to the potatoes
Mash but keep chunky
Place in a 9 x 12 backing pan
Drizzle top with the 2 tbsp of olive oil and spread
Top with the 1/4 cup of parmesan cheese
Bake in a pre heated 400 degree over till bubbly brown
let rest for 5 minutes before serving
