Crispy Baked Pork Chops

4 x 1/2 Center Cut Pork Chops
1 cup of Mayonaisse
2 tbsp of Dried Tarragon
1 Lemon (Juiced)
1 x 3 to 4 oz of Salt and Vinegar Potato Chips
1 tsp of Salt and Pepper
Pre-heat the oven to 400 degrees
in the mean time
Mix the mayo, tarragon, and juice of the lemon.
Set aside
Season the pork chops on both sides with salt and pepper.
By hand crush the chips into panko sized crumbs
Spread the mayo mixture evenly over both sides of the pork chops
Now press the pork chops into the salt and vinegar panko like chips
Place pork chops on to a baking sheet
Bake in the center of the oven rack for 15 -20 minutes until crispy and brown and internal temperature of 150 degrees
Let rest for 5 minutes
