Breast of Chicken Cacciatore

6 x Skin on Bone-in Chicken Bone Thighs

1 cup of Oil

1 Large green pepper (Medium Diced)

1 Large onion (Medium Diced)

6 Garlic Cloves (Fine Diced)

1/8 cup of Fresh Basil (Medium Diced)

1 cup of White Wine

1 x 24 – 28 oz of Canned Tomato Sauce

1 tsp Dried Oregano

1 tsp salt and pepper


Heat large saute pan over med-hi heat

Pat dry thighs with paper towels

Season with salt and pepper

Add oil to pan gently place thighs skin facing down and brown for at least 5 minutes

Turnover and brown bottom of thighs

Reserve oil in pan and remove thighs and set aside

Add the garlic along with the onion and pepper, saute for 5 minutes

Add oregano saute for one minute

Add white wine and bring to a boil for one to two minutes

Add the tomato sauce and the fresh basil

Add the thighs and cover in sauce and cover

Simmer for 40 – 45 minutes till chicken is tender
