Smoked Sausage Jambalaya

Smoked Sausage ( Any style)

2 Cups Chopped Celery

2 Cups Chopped Onion

2 Cups Chopped Green Peppers

1/8 Cup Sliced Scallions

1/8 Cup Chopped Garlic

1 x 14 oz Can of Diced Tomatoes

2 tbsp Cajun Spice ( Any Brand)

2 Cups of Long Grain Rice

4 Cups of Chicken Stock

1/2 Cup Vegetable Oil


In a Dutch oven saute your smoked sausage in vegetable oil over medium heat

Turn up heat and add Garlic and saute

Add all other chopped vegetables and saute for 5 minutes

Add cajun spice and tomatoes sauce and chicken stock

Adjust salt and pepper, add rice and bring to a boil

Then reduce to a simmer and allow to cook for 20 -25 minutes, fluff with fork
