Anitas Old Style Beef Stew

1 lb Cubed stew meat

1 Large onion (Medium diced)

4 Stalks of celery (Medium diced)

4 Medium carrots (Peeled) 1/4″ slices

6 Garlic cloves (Small dice)

1 lb Russet potatoes peeled and cut into 1/2″ cubes

1 bag of Frozen peas (8 to 10 oz bag)

4 cups of Beef Stock (Canned works great)

2 x 1 tsp of Salt and Pepper

1/4 cup of Oil plus 1/8 of a cup


Heat heavy sauce pot over high heat

Add the 1/8 cup of oil, salt, pepper, and beef stock (Mix well)

In another sauce pot heat oil

Add 1/2 of the beef and brown on all sides (Leave beef oil)

remove and brown rest of the beef (Leave oil)

in the same pot lower heat to medium

Add garlic and onions and saute for 5 minutes

Add the celery, onions, carrots saute for five minutes

Add the beef and stock (Return to boil)

Add potatoes (Return to boil)

Then lower to a soft simmer

  • No thickener needed as the starch from the potatoes will naturally thicken the stew

Simmer covered 30 – 45 minutes until beef is fork tender and potatoes are slightly over done but holding its shape

Add salt and pepper
