Baked Pork Chops with Dijon and Carraway

4 x 6 oz Pork Chops (Bone in)
1/8 cup of Oil
1/8 cup of Dijon Mustard
2 tbsps Whole Caraway seeds
1 lb Fingerling Potatoes ( Cut in 1/2 lengthwise)
Season pork chops with salt and pepper
Heat saute pan over medium high heat
Add pork chops to pan and brown on both sides for 2 minutes till golden brown
Remove from pan and place in baking pan
Spread the pork chops with the dijon mustard and sprinkle on caraway seeds
In the same pan you cooked your pork chops and same oil
Place potatoes flat side down over medium heat and cook til golden brown
Season with salt and pepper
Remove from pan and place in baking pan along with pork chops
Bake in pre heated oven at 400 degree for 15 minutes
Remove and let rest
