Tarragon Mushroom Chicken

Tarragon Mushroom Chicken

4 tbsps. Butter

2 x 1 Large Boneless Chicken Breast (Slit in Half )

2 Shallots (Diced Small)

6 Garlic Cloves (Diced Small)

1/4 Cup of White Wine

2 Cups of Shiitake Mushrooms (Stems removed and cut in 1/4 pieces)

2 tbsps of Fresh or Dried Tarragon

1 Cup Heavy Cream

1/4 Cup of Oil


In a Large pre heated saute pan add the oil and Sear The chicken breast on both sides until lightly browned,

Remove chicken breast from then add garlic, shallots and saute for 1 minute

Then add the butter, mushrooms, and tarragon

Saute till mushrooms are tender (approx 5 minutes0

Then add white wine and bring to a hard boil for one minute then back down to medium heat

Add heavy cream and bring back to a boil then reduce to medium consistency

Adjust salt and pepper add chicken back and simmer for 5 minutes
