Sweet Potato Apple Salad

4 Medium Sweet Potatoes (cut in 1/2)
2 Granny Smith Apples (cut into 1/4 strips)
4 tbsps of Capers
1/2 Cup of Scallions (sliced)
1/4 Cup of Cilantro (chopped)
1/2 Cup of Walnuts (chopped)
1/8 Cup of Honey
1/8 Cup of Olive Oil
4 tbsps of champagne vinegar
2 tbsps of Garlic (chopped)
Season sweet potato’s slices with salt and pepper
Bake or grill till tender (bake at 400 or grill over medium high heat)
Cool potato’s then cut in half and reserve.
Dressing
in a small bowl, mix honey, garlic, and vinegar
Slowly whisk in olive oil
Toss in capers
Add potato’s to a large bowl
Toss in apples, walnuts, scallions, and cilantro
Add dressing and mix well.
Great cold or at room temperature
